Ultra New York Strip Steaks$600.00The New York Steak is also known as "Strip, Kansas City, Club, and many other names". It comes from the Short Loin section of the beef. The Short loin is known for its tenderness. These New York Strips come from the highest quality American Wagyu available. Ultra is Mishima Ranches highest quality grade of beef. These strip steaks are estimated to grade a 8-9 BMS. These strips are then aged for at least 20 days. Our butchers will then remove all excess fat, and external connective tissue. These strips are now ready to be cut into your choice portion. I am confident you will be happy with your purchase, the tenderness of the strip combined with the marbling of the Wagyu is an incredible experience.- Tenderloin Steaks are cut from the Wagyu tenderloin muscle. The Tenderloin muscle must first be removed of the side muscle, connective tissue, and nose, before cutting into steaks. The tenderloin steak when cut properly is the most tender steak on the wagyu cow. Portions are usually 6 oz - 8 oz and is best seared and served rare.
